Lazy Girls banana Bread
Want something easy with minimal ingredients yet still tastes tasty and delicious?
Here is the perfect “Lazy girls” take on Banana Bread. I’m playing you’re not lazy, you’re probably just busy, therefore you’re too lazy to make your own from scratch.
This is still going to be the most moist and delicious (sorry I used moist) Banana Bread ever. It’s soooooo good you will thank me later. I did add some of my own little tweaks to make it extra yummy.
“Girl you got that”… Okay haha but seriously whip this up and you might as well play that Yummy song while you bake because that is what you are!

The most basic of basic ingredients
XO Baking Gluten Free mix (yes we like this)
3 Bananas not 2 (they need to be brownish)
Unsweetened Coconut Milk
Vegetable oil (best of the bad versions of oils- need it for high heat sorry honey but we are making bread)
2 Farm Eggs
Vanilla extract
Optional: Walnuts, Pumpkin seeds, Chocolate chips
*Key* reminder mix wet ingredients separate from the mix first
Heat oven to 350 F or 180 C
Spray avocado oil on a 8” or 9” loaf pan
In a large bowl mix the dry ingredients mix, add in wet ingredients ( 3 tbsp coconut milk, 2 eggs, 1/3 cup safflower oil, 3 mashed banana, 1 tsp vanilla extract)
Additional options: 1/2 cup chopped walnuts, 1/3 cup pumpkin seeds, 1/3 cup dark chocolate chips
Bake for 35-40 min or until toothpick inserted removes clean. Cool for 10 minutes.
