Flourless Peanut Butter Cookies

Vegan, Gluten-Free, Soy Free, Oil Free, Freezer-Friendly Cookies!

Ingredients

  • 1.5 Tbsp: Ground Flaxseed

  • 3 Tbsp: Water

  • 1/2 cup: Shredded Coconut (Unsweetened)

  • 1/2 cup: Gluten-Free Oats

  • 1/2 cup: Brown Sugar

  • 1 Tsp: Baking Powder

  • 1/2 Tsp: Hımılayan Sea Salt

  • 1/4 cup: Dark Chocolate Chips

  • 1/2 cup: Natural Smooth Peanut Butter

  • 1 Tsp: Vanilla Extract

  • 2 Tbsp: Pure Canadian Maple Syrup

(12-15 minutes only)

Cool to dry

Freeze up to a month

Instructions

  1. Preheat the oven to 350° F (180°C).

  2. Line a baking sheet with foil or parchment paper.

  3. In a medium bowl, whisk the flaxseed with water, set aside for a few minutes.

  4. In a larger bowl, pair coconut, rolled oats, brown sugar, baking powder, salt, and chocolate.

  5. Add the peanut butter, vanilla, maple syrup to the bowl with the flax mixture and stir until all combined.

  6. Whisk away and begin to use your hands to clump the mixture together. If mix is still dry try wetting your hands and continue for 1 minute. The dough should come out sticky.

  7. Begin to form the dough into 12 balls roughly the size of golf balls. Place them on the prepared baking sheet 2-3 inches (5-8 cm) apart. Gently press down to flatten.

  8. Place in oven for 12-15 minutes.

  9. Enjoy :)
